Waldorf Salad

It has been said that this salad originated more than 100 years ago at the Waldorf Hotel in New York City. Over the years, this salad has changed somewhat as far as the ingredients people like to add to the recipe — such things as grapes and nuts, and whipped cream.

This simple salad does not require cooking, but a lot of chopping, and only takes a few minutes to mix together. The lemon is an important ingredient since it will keep the apples from turning brown. I hope you enjoy it.

Ingredients

1/2 cup mayonnaise

1/4 cup sour cream

1 tablespoon fresh lemon juice

1/4 teaspoon salt

1 teaspoon honey

1/2 cup walnuts

2 stalks celery

1/3 cup dark raisins

3 red apples (Braeburn, Cortland, Red Delicious)

Instructions

Combine the first five ingredients as dressing. Stir in apples, celery, walnuts and raisins. Refrigerate. Serves 6.


Upside Down Pizza

This recipe I have made a couple of times and our family really enjoyed it. If you have a favorite meat other than hamburger, you can use pepperoni and black olives or whatever else you like. I like mozzarella cheese, so that is what we pile on top of the pizza before throwing it into the oven.

Ingredients

1 1/2-2 pounds hamburger

1 small onion, chopped

1 jar (at least 15 ounces) spaghetti sauce

1/2 pound grated cheese

1 cup milk

1 cup flour

2 eggs

1 tablespoon oil

Instructions

Brown hamburger and onion. Drain. Put meat on the bottom of a 9-by-13-inch pan. Pour a jar of spaghetti sauce over the meat. Sprinkle the cheese over the meat. Mix milk, flour, eggs and oil into a batter. Pour this on top of the meat and cheese mixture. Bake at 375 degrees for 45 minutes. Let sit 5 to 10 minutes before cutting. You can change the meat, use whatever sauce and add other ingredients as you wish.


Rancher’s Pork Chops

Pork chops are good for supper and a change from the normal beef and chicken at our house.

Ingredients

2 to 3 lean pork chops (½ to ¾ inch thick)

1 small onion, sliced

3 tablespoons catsup

2 tablespoons brown sugar

Instructions

Brown chops in skillet. Place onion slices in the bottom of the crock pot. Place the chops on top. Mix brown sugar and ketchup and pour on the chops. Cover the crockpot and cook for 6 to 8 hours. This recipe can be doubled or tripled.

Green Shamrock Milkshake

For all you Irish people who like to celebrate St. Patrick’s Day during the weekend of March 16, here is a recipe that you might like to try (maybe even if you are not Irish). It might even remind you of the Shamrock milkshake that they serve at McDonald’s.

Ingredients

4 (1/4 cup) scoops vanilla ice cream

1/2 cup whole milk

1/4 teaspoon peppermint extract

6 drops green food coloring

Whipped cream and maraschino cherries, for topping

Instructions

In a blender, blend ice cream, milk, peppermint extract, and food coloring until smooth. Pour milkshake into a glass. Top with whipped cream. Garnish with a cherry.
