Cheer on your favorite team while snacking on these family faves
With the lazy days of summer coming to an end, there will be numerous school events, football games and other sports to attend and cheer on your favorite teams. It is a fun time, but sometimes takes away time from cooking. Some of us will wonder what you should prepare for supper.
This Corn Dog Bites recipe may be one that you might like to try. This recipe is from my daughter-in-law. Our great-grandchildren really enjoyed them. I understand that the Corn Dog Bites can be a bit less messy than the traditional corn dogs.
Corn Dog Bites
Ingredients
4 hot dogs (cut into 8 pieces)
1 egg
2 tablespoons sugar
1 cup cornmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons olive oil
1 cup milk
1 cup flour
Pinch of salt and pepper
Instructions
Mix ingredients, except hot dogs, until well blended. Fill 8 greased muffin tins with batter and push the hot dog pieces into the center of the batter. Bake at 400 degrees for 15 minutes or until browned. Enjoy!
Super Nachos
Are you having people over for a get-together after a ball game? Super Nachos may fill the bill for a quick snack. They can even be prepared in the microwave except for cooking the ground beef.
Ingredients
1 can refried beans
1 pound ground beef, browned and drained
1 small onion
Green chilies
1 bottle prepared taco sauce
Ripe olives
1 cup shredded cheese
Instructions
Brown ground beef and onion. Spread refried beans in a microwave safe dish. Sprinkle cooked ground beef, ripe olives and green chilies on top of beans. Pour taco sauce over top. Cover with shredded cheese. Microwave on high for 8 to 10 minutes. Garnish with sour cream. Use it as a dip with taco chips.
Buffalo Chicken Dip
Ingredients
1 (8 ounce) package cream cheese
1 large can chicken, drained
4 ounces blue cheese
1/2 bottle Frank’s hot sauce
Instructions
Spread cream cheese in bottom of pan. Use a glass pie pan. Separately mix the chicken and hot sauce in a bowl. Spread chicken mixture over cream cheese. Sprinkle it with blue cheese. Bake at 350 degrees until blue cheese is slightly melted (15 to 20 minutes).
Apple Pie with Crumble Topping Crust
This recipe has lengthy instructions but is very easy to make. What is nice is that you don’T have to roll out the dough for the pie crust. Serve this recipe and I am betting you will have a new family favorite. This is another recipe that my daughter-in-law shared with me. I hope that you enjoy it.
Crust Ingredients
1 1/2 cups flour
2 tablespoons milk
1/2 cup vegetable oil
1 teaspoon salt
1 1/2 tablespoons sugar
Filling Ingredients
3/4 cup sugar
2 tablespoons flour
1/4 cup brown sugar
1/4 teaspoon nutmeg
2 teaspoons cinnamon
Dash of salt
Crumb Topping Ingredients
1/3 cup melted butter
3/4 cup flour
Instructions
Mix with a fork until crumbly. (May need to add more flour). Bake at 425 degrees for 20 minutes on the bottom rack. Move to the top rack and bake for an additional 30 minutes at 350 degrees. Serve with sweetened whipped cream or vanilla ice cream.
Loretta’s Cooking Tips
• Combine leftover mashed potatoes with chopped chives. Put into cupcake liners, top with grated cheese and broil until cheese melts. Easy peasy!
• Fresh tomatoes keep longer if stored in the refrigerator with stems down.
• Cooking vegetables in their skins retains more minerals.
